Warming sweet potato soup

1 tbsp sesame oil
1 onion, in rings
2 garlic cloves, finely chopped
1 inch thick piece of fresh ginger, peeled and finely chopped
1 inch thick piece of fresh turmeric, peeled and cut into small pieces
1 tbsp Star Mix
1 large sweet potato
1 can of coconut milk
250 ml stock
1 bunch fresh coriander
Anweisungen
- Heat the oil in a soup pot and fry the onion and garlic for 2 minutes
- Then add the ginger and turmeric and let it fry for a while
- Peel the sweet potato and cut into pieces
- Add the sweet potato to the pan and keep stirring
- Deglaze after about 5 minutes with the coconut milk and stock
- Put the spices in a tea squeezer or a tea filter and hang it in the pan.
- Cook on low heat for about 20 minutes until the sweet potato has softened
- At the last minute, remove the spice mix from the pan and blend the soup into a velvety, creamy mass
- Finely chop the coriander and serve it with the soup
