Lentil curry soup

4 onions, chopped
4 garlic cloves, chopped
3 cm ginger, chopped
3 carrots, peeled
350 g red lentils
2 tbsp Sunny Curry, ground
750 ml vegetable stock
1 can of coconut milk
1 lime
lemon pepper
4 tbsp yogurt
Hot & Salty
1 bunch coriander
1 bunch of mint
Anweisungen
- Heat a soup pot with a good splash of sunflower oil. Saute the onion, garlic, ginger and chili. Add the Sunny Curry to this and fry on a low heat for about three minutes until everything is translucent and starts to smell nice.
- Meanwhile, grate the carrots with a coarse grater.
- Now add the lentils, carrot and diced tomatoes. Deglaze with vegetable stock and coconut milk. Let the lentils cook for about 20 minutes. Keep stirring occasionally. You will see that the soup will become thicker and creamier. Season the soup with hot & salty, lemon pepper and lime juice.
- Serve the soup with a spoonful of yogurt, fresh coriander and mint and optionally. some extra hot & salty
- It is nice to eat the soup with a piece of naan bread or a fresh carrot salad.
