Oven roasted smashed potatoes with Café de Paris butter

  • 100 g butter

  • 2 tsp Café de Paris mix

  • 1 kg baby potatoes

  • 4 cloves of garlic

  • Olive oil

  • Fresh rosemary

  • Salt Exotico

Anweisungen

  • Mix the butter with the Café de Paris mix and place in the fridge to set.
  • Preheat oven to 220ºC. Place potatoes in a saucepan of cold, salted water, bring to the boil and cook for 20 minutes or until cooked through. Drain and lay on a baking tray. Squash with the back of a spoon or with a fork.
  • Peel and chop the garlic and mix with the olive oil.
  • Sprinkle oil over the potatoes.
  • Cut the butter in cubes and place over and between the potatoes.
  • Add the rosemary.
  • Generously sprinkle with Salt Exotico.
  • Place in the oven for about 30 minutes, until the potatoes are crispy and golden brown.
