  • Fill a saucepan with the orange juice and honey.
  • Add the golden salt.
  • Heat the pan and let the honey dissolve.
  • Reduce the liquid until it becomes darker in color.
  • Remove the bag of spices after about 10 minutes when the liquid starts to thicken.
  • Reduce to a brown syrup-like consistency.
  • It should smell like caramel and have become the thickness of syrup when cooled. (warm it is a bit thinner)
  • It is important that at the end when the liquid really starts to caramelize, you continue to stir well with a wooden spoon! This prevents the caramel from burning all of a sudden.
