Steak with Café de Paris butter sauce

100 g unsalted butter , softened
1 small shallot, finely chopped
1 garlic clove , finely minced
1 tsp Dijon mustard
2 tsp Café de Paris mix
1 tsp Salt Exotico
2 tsp fresh parsley , finely chopped
2 steaks of choice
1/2 tsp Salt Exotico
1/4 tsp black pepper per steak
1 tbsp vegetable oil
Anweisungen
- Place ingredients for the butter in a bowl and mix to combine.
- Place on cling wrap and roughly shape into a 20cm log using spatulas or butter knives.
- Roll up, then twist ends tightly.
- Refrigerate for 3 hours or until firm.
- Take the steak out of the fridge 30 minutes prior to cooking.
- Pat steaks dry with paper towels to dry.
- Heat oil in a heavy based skillet over high heat until it is very hot – you should see smoke!
- Sprinkle each side of the steak generously with Salt Exotico and pepper, then immediately place in the skillet.
- Cook the stakes to taste and let them rest on a warm plate for 5 to 10 minutes.
- Add two slices of Café the Paris butter to each of the steaks before serving them.
- Serve with baguette or french fries and a nice green salad.
