Steak with Café de Paris butter sauce

  • 100 g unsalted butter , softened

  • 1 small shallot, finely chopped

  • 1 garlic clove , finely minced

  • 1 tsp Dijon mustard

  • 2 tsp Café de Paris mix

  • 1 tsp Salt Exotico

  • 2 tsp fresh parsley , finely chopped

  • 2 steaks of choice

  • 1/2 tsp Salt Exotico

  • 1/4 tsp black pepper per steak

  • 1 tbsp vegetable oil

Anweisungen

  • Place ingredients for the butter in a bowl and mix to combine.
  • Place on cling wrap and roughly shape into a 20cm log using spatulas or butter knives.
  • Roll up, then twist ends tightly.
  • Refrigerate for 3 hours or until firm.
  • Take the steak out of the fridge 30 minutes prior to cooking.
  • Pat steaks dry with paper towels to dry.
  • Heat oil in a heavy based skillet over high heat until it is very hot – you should see smoke!
  • Sprinkle each side of the steak generously with Salt Exotico and pepper, then immediately place in the skillet.
  • Cook the stakes to taste and let them rest on a warm plate for 5 to 10 minutes.
  • Add two slices of Café the Paris butter to each of the steaks before serving them.
  • Serve with baguette or french fries and a nice green salad.
