Warming sweet potato soup

Zutaten

  • 1 tbsp sesame oil

  • 1 onion, in rings

  • 2 garlic cloves, finely chopped

  • 1 inch thick piece of fresh ginger, peeled and finely chopped

  • 1 inch thick piece of fresh turmeric, peeled and cut into small pieces

  • 1 tbsp Star Mix

  • 1 large sweet potato

  • 1 can of coconut milk

  • 250 ml stock

  • 1 bunch fresh coriander

Anweisungen

  • Heat the oil in a soup pot and fry the onion and garlic for 2 minutes
  • Then add the ginger and turmeric and let it fry for a while
  • Peel the sweet potato and cut into pieces
  • Add the sweet potato to the pan and keep stirring
  • Deglaze after about 5 minutes with the coconut milk and stock
  • Put the spices in a tea squeezer or a tea filter and hang it in the pan.
  • Cook on low heat for about 20 minutes until the sweet potato has softened
  • At the last minute, remove the spice mix from the pan and blend the soup into a velvety, creamy mass
  • Finely chop the coriander and serve it with the soup
